Calvisius Caviar Lingotto

A product designed to push the limits of Calvisius Caviar in the kitchen: high temperatures.

Calvisius Caviar is fresh i.e. unpasteurised, and it is important not to use it on hot dishes, otherwise the roe will be cooked, losing most of its aromatic complexity.
We have therefore come up with the Calvisius Caviar Lingotto bar in order to go beyond this limit, reaching new gastronomic horizons. A long, delicate process keeps the roe intact, along with its unmistakable fragrance.

To be used both hot and cold, but on hot dishes it expresses its full, rich and sophisticated aroma. Try it on a seafood risotto, baked fish, jacket potatoes, but also with meat!

The Calvisius Caviar Lingotto can be used in two ways:

  • Grated, like bottarga – see the gift box with Microplane grater
  • Shaved, like truffles – with this cut, you can see the filigree of the still intact roe
