This type of caviar is obtained from white sturgeon, a species native to the Pacific Ocean and distributed from Alaska to Baja California.
It is among the most long-living sturgeons, it can reach the one hundred years of age, 800 kg of weight and up to the 6 m of length. In addition to its lean meat with high protein content, it is particularly valuable for its production of large eggs, from 3.0 to 3.2 millimeters, characterized by a color ranging from dark gray to black, with charcoal greyĀ shades. It takes at least 15 years to obtain this caviar.
